The Culinary Texts in the Cossack Ukraine of the 18th Century: The Recipe Books of the Kulyabky`s and Galagan`s Noble Families

The article is dedicated to a critical analysis of the private recipe books of the Kulyabky and Galagan families of the Cossack Officials (Starshyna). These collections are important sources of the history of Ukrainian gastronomic culture of the 18th century and the only samples of this genre known today. The handwritten recipe books belonged to representatives of the well-educated and wealthy classes — Colonel Ivan Kulyabka (?—1773) from Lubny and Bunchuk Comrade Ivan Galagan (?—1798) from Pryluky. Recipe books act as markers of domestic practices of the family and regional culinary traditions. At the same time, they are material for tracking fashionable gastronomic trends, giving an idea of their owners’ taste preferences and material resources. Textological analysis of recipe books allows us to reveal the nature of the circulation of gastronomic knowledge and skills, the circle of potential sources of recipe collections, and to analyze their terminology. Elements of food culture, recorded in family recipe books, are markers of social status and the lifestyle connected with it. At the same time, they are eloquent evidence of the cherishing of Ukrainian identity at the end of the Cossack Ukraine and at the beginning of the imperial era.
